Recently the topic of young cooks, specifically the dearth of quality young cooks, has arisen in the food media. Chefs such as David Chang, Shuna Lydon, and Matt Accarrino have voiced, among other laments, the lack of reliability, lack of work ethic, and the unreasonable expectations of fame and glory exhibited by the next generation of culinary professionals. Blame for this vacuum of talent and ability in the high-end food industry is placed upon culinary schools and their snake-oil salesmanship, the Food Network and other food media that have created the celebrity chef icon, even the generation of parents who have raised our youngest cooks with a sense of entitlement and a void of discipline.
